I LOVE BROWNIES!!! I don’t know anyone who does, do you? If I did I would probably stop acquaintance with them. As you can imagine vegan versions run the gambit of awful to pretty amazing and here is one of the AMAZING ONES! I learned of the recipe from a blog I was reading and I went on the hunt to find it. There are a few of them on the web. I chose mine from https://chocolatecoveredkatie.com I did make two modifications. All in all, these are just awesome.
1 1/2 cups black beans or 1 15-oz can drain and rinse very well
3 tbsp cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/2 cup pure maple syrup or agave
1/4 cup coconut or vegetable oil. I used a butter flavored all plant-based coconut oil.
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup to 2/3 cup chocolate chips more chips, for presentation
Preheat oven to 350 F
Combine all ingredients except chips in a good food processor, and blend until completely smooth. It can take a little work but blend well.
Stir in the chips, then pour into a greased 8×8 pan.
Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! Makes 9-12 brownies.
